Tony Halstead.​ - OWNER

Beginning his hospitality career working in the bottle shop at Kelly's Hotel Cranbourne, Tony worked his way to a management role by the age of 21 years.  A well sought after General Manager, he worked in a number of local hotels before purchasing his own restaurant "Tides" in 2010.  He refers to his employee's as his "Tides Family" and has based his management style around this.  Tony has made it his aim to ensure all guests choosing to spend their precious leisure time at his restaurant, leave having had a positive and enjoyable experience.  In his own leisure time he can often be found on Westernport Bay and says "there is nothing like the feeling when a big snapper starts to run with your bait, the bend of the rod once hooked, and the thrill of the fight".  

Wayne Orchard - HEAD CHEF

From the humble beginnings of working in a Fish & Chip shop at the age of 16 years, Wayne discovered his love for cooking working in a local hotel kitchen. He began an Apprenticeship enjoying the lifestyle, the "mateship" relationships formed with colleagues and being able to have a good time  while being in a fairly frantic environment.   His inspiration comes from a number of places, dining out, books, magazines and television shows with Celebrity Chefs. For Wayne its about using fresh ingredients and local produce to create something amazing on a plate.  At home his favourite dish is a simple roast lamb with vegetables, mint sauce and gravy, he says "you can't beat it".   Waynes greatest joys are his two children, spending time with his fiance' Jo and he enjoys watching sport on television.

Andrew Murray - 2ND CHEF

As a young boy Andrew enjoyed watching cooking shows and soon fell in love with cooking. He started his Apprenticeship at the age of 16 years completing his training with Kelly's Hotel in Cranbourne, Andrew gained inspiration from cook books and loved creating unique and tasty dishes for people to enjoy.  An avid Melbourne AFL supporter Andrew enjoys watching sport and playing golf with friends.

Liz became a Chef by circumstance when her mother took ill and Liz filled in on her job at a home for the elderly working in the kitchen. While taking care of her mum, she grew to really enjoy the kitchen.  Liz was trained from scratch at a restaurant in Mornington before accepting a position with the Frankston RSL and completing her Certificate 3 in Commercial Cookery and Certificate 4 in Patisserie.  In her leisure time Liz enjoys her garden, camping with her 3 children and her  fur baby Rascal, a eight year old Beagle.
